Incorporating Vegetables

I find it easy to incorporate vegetables in the diet by adding them directly to the meat dish.  The next time you make lasagne, try layering broiled eggplant slices instead of using noodles.  The same with spaghetti, use spaghetti squash instead of spaghetti noodles.  Stuff zucchini or peppers with a mixture of ground meats and brown rice, then roast them.  Try poached eggs on a bed of mixed greens. There are so many simple ways to add veggies to the diet because they are so versatile.  Buy or grow seasonal, organic vegetables for optimal taste and nutritional value, and Be Creative!

Yum. Sounds good. I need to revamp this site in a number of ways. One way will be enabling photo uploads for testimonies. I'd like to see a picture of that yummy sounding dish.
